New for 2022, the Edimentals program has been designed to bring the beauty of flowers, the joy of growing your own food, and the opportunity to create something unique that will keep on giving all season long no matter how large or small your space is. With sustainability and ease in mind, all mixes included in the Edimental lineup include items that are completely edible.

This year we are excited to bring you five different Edimental mixes with corresponding recipe ideas:

Lemon Pesto: Basil Emerald Towers, Begonia Sprint Plus Orange, Marigold Little Hero Yellow, Mentha requenii (Corsican Mint)

WHAT TO MAKE: Basil and Lemon Pesto

Ingredients: ◦½ cup fresh Basil leaves ◦¾ cup fresh Mint leaves ◦¼ cup Pine Nuts, toasted ◦2T Parmesan

◦1 Garlic clove ◦¼ cup extra virgin olive oil ◦Lemon (juice and lemon zest)

PUT IT ALL TOGETHER: Blend the mint, basil, pine  nuts, and garlic in a food processor until finely chopped. With the machine running, gradually add ¼ cup of olive oil, processing until well blended. Transfer the pesto to a medium bowl. Stir in the parmesan. Season to taste with salt and pepper. You can toss the pesto with any type of noodle and add cooked shrimp or chicken.

Add Begonia and Marigold flowers to garnish the plate. Both the Marigolds and Begonias have a lemon citrus flavor and are edible to be enjoyed with your meal.

Bougie Salad Mix: Nasturtium Baby Orange, Viola Sorbet XP Yellow, Begonia Sprint Plus Red

WHAT TO MAKE: Bougie Salad Mix

Ingredients: 1 (5oz) package of butterhead lettuce, ◦1 (5oz) package arugula ◦3 rainbow carrots ◦½ snap peas ◦¼ cup red cabbage ◦Violas, Begonias and Nasturtium blooms

PUT IT ALL TOGETHER: ◦ Mix the butterhead lettuce and arugula together, shave the carrots into ribbons, then shock them in an ice bath to curl, thinly slice snap peas on the bias, shred the cabbage. Spread the lettuce and arugula mix neatly on a medium sized plate, sprinkle the carrots, peas, and cabbage across the plate. Gently pick a mix of Viola, Begonias, and Nasturtium blooms from you planter and decorate your salad with them. Add your favorite dressing. Enjoy!

Decorate your Plate: Snapdragon Snaptastic Orange Flame, Lemon Thyme, Viola Sorbet Tiger

WHAT TO MAKE: Use all of the items as garnish to any dish, your favorite avacado toast, pizza, chicken anything!

These blooms taste delicious! 

◦Snapdragons taste like pea pods with a tang!

◦Violas have a mild, slightly sweet flavor

◦Thyme has an earthy, lemony flavor and looks great as a garnish!

Unique Greek: Tomato Red Velvet, Oregano Greek, Begonia Bada Boom White

WHAT TO MAKE: Oregano-Marinated Tomato Salad

Ingredients: ◦1lb Tomatoes ◦2 T extra virgin olive oil ◦2 T fresh oregano leaves ◦2t Kosher salt ◦1t freshly ground pepper

PUT IT ALL TOGETHER: Toss all ingredients together in a medium bowl.  Let sit at least 30 minutes to an hour.  Serve with olives and garnished with Begonia flowers.
