Grilled Eggplant Mozzarella Stacks with Pesto & Tomatoes

Ingredients:
2 small eggplants, 2 pounds total weight
3 Tbpsn olive oil
1 clove garlic, minced
1 Tbspn chopped fresh herbs like thyme, oregano or 1 Tspn dried Italian seasoning
½ Tspn sea salt
1-8oz ball of fresh mozzarella
2 cups cherry tomatoes, 8 eaches

EASY PEASY

Easy Pea & Mint Soup

Soup made from fresh green peas

Ingredients
1 tablespoon extra-virgin olive oil, more for serving
1 ounce (2 tablespoons) unsalted butter
1 medium red onion, finely chopped
1 clove garlic, minced
5 cups (750 grams) frozen or shelled fresh peas, divided
1 cup (75 grams) fresh mint leaves, coarsely chopped
3 1/2 cups (1 liter) vegetable stock, divided
1/8 teaspoon sea salt, or to taste
1/8 teaspoon freshly ground pepper, or to taste
1/2 cup (75 grams) freshly grated Parmesan cheese, optional

**Be sure to add the Begonia garnish at the end to add a lemony flavor!
